Key Responsibilities
- Food Preparation & Service: Cook and present menu items consistently according to established recipes, portion sizes, and quality standards.
- Kitchen Operations: Oversee daily station setups and delegate prep tasks to kitchen hands and junior staff.
- Menu & Innovation: Assist in creating daily specials and developing seasonal menus that manage food costs.
- Inventory Control: Monitor food stock, rotate inventory to minimise waste, and place orders with approved vendors.
- Food Safety & Sanitation: Maintain a spotlessly clean workstation and enforce all local council health department regulations and safety standards.
- Dietary Requirements: Safely modify dishes to accommodate guest allergies and dietary requests (e.g., gluten-free, dairy-free).
- Team Collaboration: Maintain a positive, professional approach with kitchen staff and front-of-house teams during high-volume periods.
Skills & Qualifications
- Experience: Minimum of 2 years of experience working in a fast-paced, high-volume kitchen environment.
- Education: Certificate III in Commercial Cookery (or equivalent vocational qualification) is highly regarded but not mandatory.
- Technical Skill: Proficient in commercial cooking techniques, knife handling, and operating standard kitchen equipment.
- Compliance: Strong understanding of food hygiene regulations and HACCP food safety plans.
- Soft Skills: Exceptional time management, clear communication, and the ability to stay calm under intense service pressure.
Work Schedule & Physical Demands
- Flexibility to work a rotating roster including mornings, evenings, weekends, and public holidays.
- Ability to stand for long periods and safely lift heavy kitchen items (up to 15-20 kg).
