Summary
Our client Itihaas Indian Restaurant is seeking to add a Chef to its culinary team in Turramurra, on Sydney’s North Shore. Inspired by the rich history and traditions of Indian cuisine, Itihaas delivers an authentic gourmet dining experience through aromatic ingredients, traditional techniques and contemporary presentation, with a strong focus on memorable flavours, quality cooking and exceptional guest experiences.
The typical job responsibilities will include, but are not limited to the following:
• Prepare and cook authentic Indian curries using traditional spices, ingredients and established recipes.
• Prepare tandoori breads, tandoori starters and other speciality Indian dishes to consistent standards.
• Assist with preparation of South Indian dishes and traditional Halwayi-style food when required.
• Prepare seafood, meats, vegetables and other ingredients according to menu and service requirements.
• Monitor food preparation, cooking temperatures and portion sizes throughout daily kitchen operations.
• Maintain consistent flavour, presentation and quality across all dishes prepared during service.
• Support senior chefs with menu preparation, daily specials and development of new dishes.
• Coordinate food preparation activities to ensure meals are completed efficiently during busy services.
• Check the quality and freshness of ingredients before preparation and cooking.
• Maintain clean, organised and hygienic workstations in accordance with food safety procedures.
• Monitor kitchen stock levels and assist with ordering ingredients and essential cooking supplies.
• Store food and ingredients correctly to maintain freshness, quality and food safety standards.
• Assist with training and guiding junior kitchen staff in preparation and cooking techniques.
• Follow workplace health, safety, sanitation and food handling requirements throughout kitchen operations.
Applicants must meet the following minimum requirements to be considered for the role:
• Minimum 2 years' recent, directly relevant commercial kitchen experience, including substantial experience preparing authentic Indian cuisine.
• Relevant qualification in commercial cookery, culinary arts, hotel management or a closely related discipline.
• Demonstrated professional experience preparing Indian curries, tandoori breads, tandoori starters and other traditional Indian dishes.
• Practical experience preparing tandoori breads, tandoori starters and other traditional Indian dishes within a commercial kitchen environment.
• Strong knowledge of food safety, hygiene, ingredient storage, temperature control and safe commercial kitchen practices.
• Ability to maintain consistent food quality, flavour, portioning and presentation while working efficiently during busy service periods.
• Ability to work collaboratively with senior chefs and kitchen staff while following established recipes and restaurant standards.
• Sound organisational skills with the ability to manage preparation priorities, stock requirements and multiple cooking tasks simultaneously.
