Head Chef – Full-Time
Global Grand Investment Pty Ltd T/A Quality Hotel Mildura Grand is seeking a qualified and experienced Head Chef to join our professional kitchen team in Mildura, Victoria.

- Employment Type: Full-Time, Permanent
- Location: Mildura, Victoria 3500
- Salary: $75,000 - $85,000 per annum plus Superannuation
Main Duties and Responsibilities
- Lead, supervise and mentor kitchen staff to ensure efficient daily operations.
- Plan, develop and implement menus in consultation with management.
- Oversee food preparation, cooking and presentation to ensure consistently high standards.
- Manage daily kitchen operations, including preparation, service, ordering and stock control.
- Ensure meals are prepared according to established recipes, quality standards and service requirements.
- Monitor food quality, portion control, presentation and consistency.
- Manage food costs, stock levels and wastage to support efficient kitchen operations.
- Liaise with suppliers and coordinate the purchasing and delivery of kitchen supplies.
- Maintain accurate stock records and ensure appropriate storage of food and kitchen products.
- Train and develop kitchen staff and allocate duties according to operational requirements.
- Maintain a clean, organised and professional kitchen environment.
- Ensure compliance with food safety, hygiene and workplace health and safety requirements.
- Work closely with management on menu development, kitchen planning and operational improvements.
- Monitor kitchen performance and address operational issues promptly.
- Maintain a professional, positive and high-performing kitchen culture.
Required Qualifications and Experience
- Minimum Certificate IV in Commercial Cookery or Diploma of Hospitality Management, or equivalent relevant qualification.
- At least two years of relevant experience in a commercial kitchen.
- Demonstrated experience in a senior chef or kitchen leadership position.
- Strong knowledge of food preparation, cooking techniques and kitchen operations.
- Experience in menu planning and development.
- Strong understanding of food costing, stock control and wastage management.
- Proven ability to lead, train and motivate kitchen staff.
- Excellent organisational and communication skills.
- Ability to work effectively under pressure and manage busy service periods.
- Strong commitment to food quality, presentation, hygiene and food safety.
- Reliable, professional and well organised.
