Position Overview:
The Idli Project is seeking an experienced Chef to lead the kitchen and take ownership of its South Indian menu, with a particular focus on idli, dosa, and other traditional Tamil/South Indian tiffin items. The successful candidate will bring strong expertise in fermentation and batter preparation, and the ability to maintain consistency, authenticity, and high hygiene standards across a busy dine-in and takeaway kitchen.
Minimum requirements:
- Be qualified in hospitality with AQF associate degree, Advanced Diploma or Diploma (ANZSCO Skill Level 2) with minimum 3 years' relevant experience as a Chef
Roles and Responsibilities:
- Plan and organise the preparation and cooking of South Indian dishes, with a focus on idli, dosa, and traditional accompaniments
- Plan menus, estimate food and labour costs, and order food supplies
- Monitor the quality of dishes at all stages of preparation and presentation, ensuring consistency and authenticity of flavour
- Prepare fermented batters and other specialty items core to South Indian cuisine, maintaining traditional preparation standards
- Discuss food preparation and menu matters with management and kitchen/waiting staff
- Demonstrate techniques and advise kitchen staff on cooking procedures
- Explain and enforce hygiene and food safety regulations in the kitchen
- Select, train, and supervise kitchen staff as required
- Manage stock levels and minimise wastage through efficient kitchen operations
