Sardo is an Italian restaurant on Ocean Beach Road in the heart of Sorrento. We serve Sardinian-inspired seafood, handmade pasta and classic Italian dishes, alongside wines from local producers. Guests dine in our relaxed courtyard setting, with live Italian music on summer evenings. We’re looking for an experienced Restaurant Manager to lead our front-of-house team.
The role includes but is not limited to:
Manage daily restaurant operations
Recruit, train, roster and supervise front-of-house staff
Deliver warm, consistent service and handle guest feedback and complaints
Work with the head chef on menus, specials and the guest experience
Manage stock, ordering, suppliers and the wine list
Control costs, budgets, cash handling and end-of-day reporting
Ensure compliance with food safety, responsible service of alcohol, and workplace health and safety requirements
Plan for peak summer trading, functions and events
About you
A relevant qualification, such as a Diploma of Hospitality Management, plus at least [3] years’ full-time experience in restaurant management or a total of six (6) years’ full-time experience
Strong knowledge of Italian food and wine
Proven leadership and staff management skills
Experience with rostering, budgeting and point-of-sale systems
Current RSA certificate (or willingness to obtain one) and Food Safety Supervisor certificate
Availability to work weekends, evenings and public holidays
Fluency in Italian is highly regarded, as you’ll work with an Italian-speaking team and clientele
